How to Make Fritter Doughnuts a.k.a. Fritule

It is finally December and that means one thing: It is time to make some delicious Christmas treats! In this post I will share with you my recipe for fritter doughnuts or how we call them in Croatia: fritule.
During the Advent season, Zagreb (the capital city of Croatia) offers plenty of fun, unique events, excellent food and of course - fritter doughnuts are on the menu.

Fritule are a festive Croatian pastry resembling little doughnuts, made particularly for Christmas. This recipe is quick and easy and I am sure you already have most of the ingredients at home.


INGREDIENTS


Dough

3.6 dcl plain yogurt (360 g)

2 eggs

2 packages vanilla sugar

pinch of salt

2-3 teaspoons sugar

20 tablespoons all-purpose flour (360 g)            

1 package baking powder                   

oil for frying

Optional:

lemon zest

1 tablespoon rum 


Toppings

powdered sugar

chocolate syrup

RECIPE PREPARATION

STEP 1

In a medium size mixing bowl sift together the flour and baking powder, then set aside.

In a small bowl, whisk together the yogurt, eggs, vanilla sugar, salt and sugar until well combined.

Add lemon zest for a sweet citrus flavor.

STEP 2

Add the yogurt mixture to the flour mixture and mix until thoroughly combined.

The rum is added to this recipe to prepare the pastries for deep frying. When the pastry is placed in the hot oil, the alcohol evaporates quickly and does not let the pastry absorb the oil. The alcohol is gone and it will leave a subtle flavor. If your batter is too runny, add flour to make it thicker.

STEP 3

Once the oil is hot, lower the heat to medium. Drop about a 1/2- tablespoon of the batter into the saucepan, 8-9 doughnuts at a time (doughnuts expand when fried).

STEP 4

Fry for about 1 minute, or until golden. Flip the doughnuts and continue to cook for one more minute, or until done (sometimes doughnuts tend to flip themselves).

STEP 5

Drain on paper towels to get rid of the extra oil.

Top with powdered sugar or chocolate syrup.

Calories: 
100 g fritter doughnuts - 285 kcal
1 fritter doughnut (20 g) - 57 kcal
